Stage 1: Maillard Reaction and Caramelization

As the coffee beans start to heat up, the first chemical reactions that occur are the Maillard reaction and caramelization. This is when the sugars and amino acids in the coffee beans begin to interact, creating a brown color and developing flavors. The Maillard reaction produces aromatic compounds and brown pigments, while caramelization enhances sweetness and complexity of the flavor.

Stage 2: First Crack

As the temperature continues to rise, the coffee beans undergo the first crack. This is a crucial stage as it marks a significant change in the structure and flavor of the beans. The beans expand and start releasing oils, making the flavor more complex with notes of caramel and roasted nuts.

Stage 3: Development Time

After the first crack, the development time begins. This is when the coffee beans develop their characteristic flavor. The length of this time is critical because if it's too long, the coffee can become bitter and lose its nuanced flavors. Conversely, if it's too short, the beans won't fully mature, and the flavor will lack depth.

Stage 4: Second Crack

The second crack occurs as the beans continue to heat. During this stage, the beans become very brittle and are prone to breaking. The flavor becomes richer with smoky and dark chocolate notes. This stage is typically associated with darker roasts such as French or Italian Roast.
